Operation 4.2.1 ‘Support for investments in the processing and marketing and/or development of agricultural products

Focus Area 3A: Improving the integration of primary producers in the agri-food chain through quality schemes, product promotion in local markets, short supply chains, producer associations and inter-professional organisations.

Azienda Vinicola del Reví S.a.s. was established on 05/02/1982 and immediately focused on the production of classic method sparkling wine. Over the years, production has expanded, both in terms of references and the volume of bottles produced. Currently, the production of Trentodoc (Trentino classic method sparkling wine) consists of 5 references, 3 basic products (vintage wines with 36 months of ageing on the lees) and 2 riserva products (vintage wines with more than 60 months of ageing). Over the years, the production decided to enrich its product range with a Trentodoc, the first presented in Trentino, produced from organically grown grapes (one of the two reserves). The company philosophy, which guides production and all processing phases in the cellar, is based on the constant search for product quality improvement, in order to obtain over time a consistent, safe product that can also be marketed in foreign countries thanks to production measures that guarantee excellent shelf life. Further, quality research means continuous experimentation and analysis in order to produce and market a healthy product that does not disturb the consumer's health.

Precisely with this in mind, during 2018 it was planned to make investments for technological modernisation; these investments were made possible thanks to the 2014-2020 Rural Development Programme of the Autonomous Province of Trento, and to Operation 4.2. 1 ‘Support for investments in favour of the processing and marketing and/or development of agricultural products’, Focus Area 3A ‘Improving the integration of primary producers in the agri-food chain through quality schemes, promotion of products in local markets, short supply chains, producer associations and interprofessional organisations’.

Thanks to this contribution, it was possible to introduce new state-of-the-art technology into the company, such as a new neck freezer for classic method bottles, an automatic monoblock for degorging, corking and metal corking, a bottle washer/dryer and finally a new air-conditioning unit.

The aforementioned investments led to a marked improvement in the production cycle: thanks to the introduction of the new neck freezer and the monoblock for degorging, the last phase of the classic method (the disgorging or degorging phase) has been speeded up considerably, as well as increased precision. This increase in speed and accuracy is reflected in greater product safety and therefore a greater guarantee of product wholesomeness. The introduction of the bottle washing and drying machine then made it possible to also connect the labelling machine to the line, thus carrying out the entire bottle disgorging, washing, labelling and packaging process at the same time. Connecting all machining steps in series resulted in considerable time savings.

Lastly, the installation of the new air-conditioning system has made it possible to better control the temperature in the cellar, with repercussions in terms of greater protection of the product and safeguarding it from sudden changes in temperature that could affect its organoleptic characteristics, and less losses during the processing phase (the disgorging phase where it is important to process the sparkling wine with preferably low and constant temperatures).
